Healthy Burger Recipe

Ingredients:

  1. 1 large sweet potato, peeled and sliced into rounds 
  2. 1 tbsp olive oil 
  3. Salt and pepper, to taste 
  4. 4 whole grain burger buns 
  5. 4 lettuce leaves 
  6. 1 large tomato, sliced 
  7. 1 red onion, sliced 
  8. 1 avocado, mashed 
  9. 4 oz. grilled chicken breast or tofu 
  10. 1 tbsp Dijon mustard 
  11. 1 tsp honey
Instructions:
  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potato slices with olive oil, salt, and pepper.
  3. Spread the sweet potato slices on a baking sheet and bake for 20-25 minutes, flipping halfway through, until crispy and golden brown.
  4. While the sweet potatoes are baking, grill or pan-fry the chicken breast or tofu until fully cooked.
  5. Toast the burger buns.
  6. In a small bowl, mix the mashed avocado with a pinch of salt.
  7. To assemble the burgers, spread the Dijon mustard on the bottom of each bun.
  8. Add a lettuce leaf, tomato slice, red onion slice, and grilled chicken or tofu.
  9. Top with the sweet potato rounds and mashed avocado.
  10. Drizzle with honey and place the top bun on top.
